Carrots should be cooled promptly after harvest and transported and stored as near 32° F as possible with humidity maintained at 95% to 100%. Under these conditions, carrots may be stored between one to five months. Carrots which have had tops removed are found to store better than those with tops intact, apparently because the tops draw moisture from the roots.
Normal storage for bunch carrots is only 8 to 12 days, normally shipped with top ice
